- Brown the LambPeel and grate the garlic (you can use a press if preferred) Heat a frying pan on high heat. When hot add the lamb mince (no oil is needed) and cook until browned, breaking it up with a spoon for 4 - 5 minutes. put a large saucepan of water with a pinch of salt on to boil for the pasta. The mince is cooked when there is no more pink bits.
- Make the SauceOnce the mince is browned, drain off any excess fat, then stir in the garlic. Cook for one minute. Add the chopped tomatoes, water, créme fraîche and stock powder. Stir to dissolve the stock powder. Bring to the boil, lower the heat, then simmer until the sauce has thickened and reduced by half.
- Cook the PastaPut the pasta in the pan of boiling water. Cook for 12 minutes then drain and return to the pan. Drizzle with a little oil to stop it sticking together - when draining the pasta, save some of the water in case you need to thin out the sauce.
- Add the SpinachWhen the sauce has thickened, stir through the baby spinach leaves a handful at a time until wilted - it takes about 2 minutes. Season to taste with salt and ground pepper. Wash the Spinach before adding it to the pan.
- Finish UpOnce the sauce had reduced and the pasta is cooked, toss the pasta through the sauce - transfer the sauce into the pasta pan if easier and heat through until piping hot.
- Serve and EnjoyDivide the Lamb Bolognese between your bowls and enjoy.
