I think it’s safe to say that everyone has had a lot of time at home recently. Instead of decorating the house and garden (although they need doing soon) I have tried to make more time for me. I’ve been reading more – I’ve started and finished 3 books, caught up on all my soaps on the planner and I have been spending more time in the kitchen baking, much to my husband and children’s delight.

I love to bake but never seen to find the time so to get in the kitchen and to bake, bake, bake has been a real tonic for me. This week I am planning to make cheesecake, quiche Lorraine, brownies and flapjack and maybe even a few other bits

The boys love apples and I love cherries so we decided to make Apple and Cherry Muffins. They are the perfect mix of the sweetness of the apples and the tart taste from the cherries.

Our recipe is below if you’d like to try them for yourself. They taste so good just as they are but you could add a little cinnamon, nutmeg, almonds or other ingredients if you wished to give them a personal touch.

Jazz Apple and Cherry Muffins

A quick and easy recipe for fruit lovers. The sweetness of the apple compliments the tang of the cherries. Perfect as a snack or for a lunchbox treat.

Ingredients
  

  • 225 g self raising flour
  • tsp baking powder
  • ¼ tsp bicarbonate of soda
  • ¼ tsp salt
  • 115 g unsalted butter
  • 2 large eggs
  • 100 g granulated sugar
  • 175 ml plain natural yoghurt
  • 2 tsp vanilla extract
  • 65 g dried cherries you can add more or less if you like
  • 1 or 2 Jazz apples depending on the size / your preference

Equipment

  • 12 hole muffin tray
  • grater
  • Muffin cases
  • A Spatula
  • Stand mixer
  • small mixing bowl
  • measuring spoons

Method
 

  1. Preheat your oven to 180°c (160°c fan oven).
  2. Line a muffin tin with 12 muffin cases of your choice
  3. Place flour, baking powder, bicarbonate of soda and salt in a bowl, mix together and place to one side.
  4. Cut any large pieces of dried cherries if necessary. Wash and grate the apple (you could cut into chunks if preferred) and place to one side. The apple once grated may go brown but this is okay. If preferred you could grate the apple in a bowl of water with a tiny bit of lemon juice and then dry with paper towel or a clean tea towel before using
  5. In another bowl beat the butter and sugar until creamed. (I use a stand mixer but you could use a bowl and electric hand mixer if preferred). Add one egg at a time until mixed. Scrape down the sides and add the yoghurt and vanilla extract.
  6. Add the bowl of flour mix into the mixture(keep a little of this in the bowl) and mix until just blended. Add the cherries and grated apple to the leftover flour and mix so that all the fruit is coated. Add this to the mixture and fold in by hand.
  7. Spoon the mixture evenly into the muffin case.
  8. Bake in the oven for 25-30 minutes or until an inserted skewer comes out clean.
