Our Amoy Supper Club Date Night

Matthew and I rarely get to enjoy an evening in together. More often than not he works late and usually the boys and I have already eaten by the time he arrives home. But this weekend was different, he had the full weekend off work so we decided that we would have a date night – A fakeaway tea, a bottle of wine and The X Factor and I’m a celebrity on TV – Perfect….

For our fakeaway I decided to make Bacon Chow Mein Stir Fry. We had recently been sent a selection of products from Eastern cuisine specialists Amoy. They have recently launched a new range of tasty products including Thai Green Curry, Malaysian Laksa and Thai Massaman Curry. I can’t wait to try these sauces in other recipes at a later date.

To support the launch of their new products Amoy have created an AMOYzing Meals in a Minute campaign. Their aim is to inspire and give confidence when it comes to preparing Asian meals. The recipes have been created with the help of international TV Chef Ching He Huang. 

To make your own Bacon Chow Mein Stir Fry, follow these simple instructions. The meal is really easy to prepare and cook. There is very little preparation time (5 – 10 minutes) and it takes just 10 minutes to cook. The recipe below will serve 1 – 2 people but if you wanted to cook for more it would be easy to do so as you would just double up the ingredients. Ideal for a quick and simple lunch or meal that everyone would enjoy.


  • 1 tablespoon Vegetable Oil
  • 75g smoky bacon lardons
  • 1 teaspoon of Amoy Dark Soy Sauce
  • 100g of Red Peppers
  • 75g Mangetout
  • 70g Beansprouts
  • 1 Spring Onion
  • 1 packet Amoy Chow Mein Stir Fry Sauce ( 120g sachet)
  • 1 packet Amoy Singapore Curry Noodles (2 x 150g)
  • 1 tablespoon Amoy Reduced Salt Soy Sauce


  • Prepare the vegetables – wash, and cut the pepper, mangetout and spring onion up into strips
  • Heat a wok over a high heat, add the vegetable oil and swirl it around so that the sides of the wok are coated
  • Add the bacon lardons and fry for 1 – 2 minutes until crispy
  • Add 1 tablespoon of Amoy Dark Soy Sauce
  • Add the sliced vegetables and beansprouts to the pan and toss for 1 minute
  • Add the Amoy Chow Mein Stir Fry Sauce and the Amoy Singapore Curry Noodles – stir so all the flavours mix well
  • Add 1 tablespoon of Amoy Reduced Salt Soy Sauce 
  • Stir well and serve

We will definitely be having the Chow Mein again in the future as it tasted great and it was really quick to prepare. Even someone like myself who can cook but sticks to what they know wasn’t phased by trying something new. I think it would be great to replace the bacon with chicken or pork as this would add a little variety to the meal. Next time I think I will serve it with Prawn or Thai crackers too and I will be sure to make it for the boys to try to as I’m sure they’d love it as much as we did.
