Chocolate Roulade Star Log Recipe

My Three and Me love to bake, and there's something wonderful about taking the time to bake lots of lovely things at Christmas. This year we are going to be making Christmas Day pudding to take with us to my brother in laws ( It's his turn to make dinner). Not everyone likes Christmas pudding so we decided that we would follow Dr. Oetker's simple recipe to make one of our Christmas favourites.

Chocolate Roulade Star Log
40 minutes prep time and will make 10 servings 


Ingredients:

For the Cake
  • 3 Medium Eggs (separated)  
  • 100g Caster Sugar  
  • 5ml Dr. Oetker Select Vanilla Extract with Seeds (1tsp)  
  • 40g Plain Flour  20 g Cocoa Powder  
  • 55g Ground Almonds  
  • 2 ½g Dr. Oetker Baking Powder (½tsp)  
  • 15ml Orange Liqueur or Orange Juice (1-2tbsp)  
For the Filling
  • 200ml Double Cream  
  • 15g Icing Sugar (1tbsp)  
For the Topping
  • 400ml Double Cream  
  • 45g Cocoa Powder Sifted  
  • 30g Icing Sugar (2tbsp)  
  • Dr. Oetker Giant Chocolate Stars  

Method
  1. Heat the oven to Gas Mark 6/200°C
  2. Whisk together the egg yolks, sugar and vanilla extract until pale 
  3. In a separate bowl, whisk the egg whites until still
  4. Mix together the flour, cocoa, ground almonds and baking powder. Fold in the egg yolk mixture along with the egg whites until combined
  5. Spread into a 21x31cm lined Swill roll tin 
  6. Bake for 10 mins
  7. Cool in the tin for 10-15 mins, then carefully turn out onto fresh baking paper, drizzle with alcohol or orange juice and gently roll using the paper to help you 
  8. Leave rolled until ready to fill
  9. Whip the cream for the filling with the icing sugar, then unroll the sponge, fill and re-roll
  10. Whip the topping ingredients together and spread all over the log 
  11. Decorate with the chocolate stars
  12. Serve and enjoy 
*If you're pushed for time you could buy a Swiss roll and decorate it using the decoration ingredients mentioned above.
