Banana Chocolate Chip Muffins Recipe

My Three love to bake. So when we were asked to create a recipe of our choice using bananas we jumped at the chance. Thank you Banana Moon for our apron (as modelled by James), rolling pin and ingredients. We had a fun filled afternoon baking our Banana Chocolate Chip Muffins.


If you'd like to make our muffins follow the very simple recipe below:
  • Preparation -10minutes
  • Cooking-20minutes
  • Total Time- 30minutes
Ingredients:
  • 225g plain flour
  • 100g caster sugar
  • 1 egg
  • 4 tablespoons vegetable oil
  • 4 tablespoons milk
  • 250g mashed bananas 
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 70g chocolate chips 

Method:

  • Put the flour, sugar, baking powder, salt and chocolate chips into a large bowl
  • Mix all the dry ingredients thoroughly. Make a well in the centre
  • In a separate bowl beat the egg, oil, milk and bananas together - make sure the bananas are ripe
  • Pour the mixture into the well that you made in the dry ingredients. You only need to give it all a small stir to mix all the ingredients together - the mixture will be lumpy (it's meant to be like this because of the mashed banana)
  
  • Line a 12-hole muffin tin with cases
  • Fill each case 3/4 full of the mixture
  • Put in the oven and bake at 200C (180 fan oven) / Gas mark 6 for 20 to 25 minutes
  • Leave to cool for a little 
  • Enjoy your muffins
  

You could change and adapt your recipe by adding different types of chocolate chips, we used milk chocolate chips but you could use dark or white chocolate instead and you can add more or less chips to suit your individual taste. You could also swap the chips for other ingredients such as cherries or walnuts.
